Easy Potato & Tuna Patties (Fish Cakes) 😋

My mom is an expert when it comes to “budget cooking”. I remember when I was a kid that she would cook this easy breakfast dish that was so good that our family would always devour it in minutes!

For the past couple of weeks, I’ve been making the same dish with a few tweaks. Introducing the Easy Potato and Tuna Patties. Also known as fish cakes, but with potatoes! 

Easy Tuna Potato Patties with Garbanzos

These quick, filling, and easy patties are one of my favorites. It is my yummy way of leveling up plain canned tuna and mashed potatoes. It is also the perfect recipe when you are always on the go and busy like me because the whole process takes just about 10 minutes and it only needs 5 ingredients.

Just a few ingredients needed:

Mashed Potatoes

  • Other than its great buttery flavor, it helps bind the other ingredients together.
  • To save on time, you can try using dehydrated potatoes to make mashed potatoes. They are real potatoes just with the water removed. Click here to know more about U.S. dehydrated potatoes.
  • Potatoes are a welcome addition to any meal. Potatoes are an excellent source of vitamin C and has potassium, dietary fiber, protein, and iron.

Tip: When creating mashed potatoes from scratch, do not overcook the potatoes. They can get too mushy if they absorb excess water. 

Canned Tuna

  • I love using tuna packed in sunflower oil or olive oil. Drain the tuna well, for less moisture.

Onion and Garlic

  • I always add them because they are high in antioxidants and brings a lot of flavor to any dish.

Egg

  • Helps bind the ingredients and serves as additional source of protein.

And of course, salt and pepper to taste.

Ingredients:

🥔 150g Mashed Potato

🐟 370g Tuna in oil, drained well

🧅 1 medium Onion, chopped

🧄 3 cloves of Garlic, chopped

🥚 1 large Egg, beaten

🧂Salt and Pepper to taste

🌿Olive Oil for pan-frying

Procedure:

  1. In a medium-size bowl, add mashed potato, tuna, onion, and garlic. Mix well.
  2. Add beaten egg as well.
  3. Season with salt and pepper.
  4. Cover and refrigerate for 15 minutes to allow the mixture to firm up.
  5. Use your hands to shape the mixture into small balls and then flatten into patties.
  6. Heat the olive oil in a large non-stick pan until medium hot. Gently add patties and cook each side for 3 minutes. 
  7. Serve the patties with cooked whole grain rice or toasted wheat buns.

You can also enjoy them with garden salad and your preferred dipping sauce. Feel free to add your favorite veggies like carrots, cauliflower, and even broccoli. I sometime add garbanzos for more texture.
