Every day is always a good day to celebrate FOOD!
Luckily, I’m in the right mood (as always) to share with you guys my family’s favorite Potato recipe, which we love pairing with some fish, grilled chicken, and eggs!
Roasted Garlic Potatoes

Ingredients:
- 750 grams red or white potatoes, cut in quarters
- 2 tbsp extra virgin olive oil
- 3 tbsp parsley, chopped
- 3 garlic cloves, minced
- 1/2 tsp each: salt & ground pepper
Instructions:
- Preheat oven to 200 degrees C.
- Halve or quarter potatoes into even size pieces. Transfer into a big bowl. Add olive oil, salt, ground pepper, and garlic. Toss until the potatoes are well coated.
- Transfer the potatoes onto a baking sheet, and shake gently to spread to a single layer. Roast in the oven for 40 minutes to 1 hour, until browned and crisp. Shake the pan and flip the potatoes after 30 minutes to ensure even browning.
- Toss potatoes with parsley and serve hot.

Eating potatoes and successfully making them fit in your diet depends on the way they are prepared and cooked, and to what food you mostly pair them with. As a Nutritionist Dietitian, I recommend you pair them with lean cut protein, vegetables and/or healthy fats like olive oil.
What I love about this 5-ingredient recipe, is that I can just mix everything all up and pop them in the oven while I do other important things.
… like doing my daily strength training, for instance. Potatoes are perfect as pre, during and post-workout snack or meal because they are more energy-packed than any other popular vegetable. A medium (5.3 oz) potato also has 3 grams of protein. A key component of muscle, protein is an important nutrient for athletic performance. #PotatoNutrition
This Garlic Roasted Potatoes recipe is my personal, as well as my family’s favorite. It is beloved by kids and adults alike, easy to prepare, full of nutrients, and they’re very tasty.
